Marinated Olives With Preserved Lemons

Marinated olives are a doddle to make and a much healthier snack than crisps or crackers. They’re also great with a drink (though maybe not so healthy then). Finally, you’ll save tons of money if you make your own instead of getting them from the deli, not to mention they’ll taste way better!

Tried & Tasted Recipe:
  • 400g green olives
  • 100ml extra virgin olive oil 
  • 2tbsp lemon juice
  • 1 tsp mixed herbs (thyme, oregano)
  • 2 cloves of garlic, peeled and minced
  • 1 tsp grated ginger
  • 1 tsp harissa (optional)
  • 2 preserved lemons, sliced
Wash olives thoroughly and drain.
Combine all the other ingredients and mix into the olives.
Set aside in the fridge for at least 24 hours.
Serve.
