Pronto Pesto Pasta

Another quickie; this recipe will only take the time needed to cook your pasta.
A healthy and tasty meal, a family favourite, a perfect recipe for the guys who want to impress their special someone…
For the carb-conscious ones, just reduce the amount of pasta or go for the wholemeal or low-carb version.
You can use whichever pasta shape you fancy, as much or as little pesto or vary the meat and vegetables.
Really, this is a no-brainer and I’m sure you’ll enjoy. ..Unless, of course, you hate pasta .
Tried & Tasted Recipe
  • 500g pasta
  • 2 tbsps olive oil
  • ½ medium onion
  • 500g green, yellow and red peppers
  • 2 chicken breasts, sliced into bite-size pieces
  • 1 jar of good quality pesto sauce (homemade is even better, but won’t be as quick)
  • Parmesan cheese to serve (optional)
Cook the pasta according to packet instructions.
Meanwhile, heat 1 tbsp oil in a large sauce pan and fry the onions on a gentle heat until translucent; add the peppers and cook for another minute or two.  Move the vegetables to one side of the pan and the pan to the side of the flame/hob, add the rest of oil and the chicken pieces, stir gently. Once the chicken is cooked, put the pan back on the heat and stir the vegetables back in.
Lightly drain the pasta (do not rinse it), add to the chicken and vegetables. Add the pesto sauce and toss gently.
Adjust seasoning and serve.
