Spinach and Parma Ham Quiche

Quiche is a dish I often make. Again, it’s very easy, uses simple ingredients and kids love it. Serve it with a quick salad and presto, you’ve got a tasty and healthy meal for the whole family.
For this recipe you can use frozen spinach and replace the Parma with another ham or with bacon; and don’t get me started with cheese - they’re so many you could choose from…- feta would be great in this.
Tried & Tasted Recipe:
  • 1 packet ready-rolled puff pastry
  • 300g spinach, steamed and chopped
  • 150g Parma ham
  • 100g sliced goat's cheese
  • 150g gruyere cheese, grated
  • 3 eggs
  • 200ml whole milk
  • 200ml crème fraîche or double cream
  • Salt & pepper
Preheat the oven to 180°C/360°F.
Mix eggs and cream together; add the milk and half the cheese. Season to taste.
Unroll the puff pastry and set into the quiche pan. Alternatively, you can use frozen pastry but you’ll have to let it defrost and roll it.
Spread the spinach all over the pastry case; cover with torn bits of Parma ham and the sliced goat's cheese. Finally, pour  the egg mixture all over and sprinkle the remaining grated cheese on top.
Place in the middle of the oven for 30 minutes
Let the quiche sit for 10 minutes before serving.
